After six super-popular warm-ups, the City sushi-chain heroes behind Tsuru have launched Tonkotsu – a permanent, ramen noodle-lovers haven. Industrial-chic, exposed brick and naked light bulbs

  dress this new Dean Street gem in typical Soho attire, while (slightly uncomfortable) communal tables and vibrant Japanese textiles capture the noodle-bar spirit. Tonkotsu operates the plainest of

  menus, which capitalises on the idea of doing one thing really well – namely steaming, slurp-worthy bowls of ramen. There are only three variations on offer, but who could resist tender pork belly

  slices laid atop thin wheat noodles with a perfectly gooey, soy sauce-seasoned egg bobbing in a rich broth made by simmering pork bones for 18 hours. Add some handmade gyoza dumplings and a few

  sides – plus a handful of craft beers, shochu and saké – and it all feels deceptively simple, but honestly good.
